Dinner at HA’ restaurant was the perfect way to celebrate my birthday at Hotel Xcaret México in Tulum, Mexico

To celebrate my birthday at Hotel Xcaret Mexico, I wanted a special dinner. Something that would showcase the vibrancy of Mexican cuisine in a contemporary fashion.  So, I made reservations at HA’ by Carlos Gaytan.

For background, Carlos Gaytan is a Mexican-American chef known for his culinary expertise and contributions to the gastronomic world. In 2008, Gaytan achieved a significant milestone in his career when he opened his restaurant, Mexique, in Chicago’s West Town neighborhood. Mexique quickly gained acclaim for its innovative fusion of Mexican and French cuisines, earning Gaytan the prestigious Michelin star in 2013—the first Mexican-born chef to receive this honor in the United States.

Now, HA’, a contemporary expression of Mexican cuisine is not included in the all inclusive price of Hotel Xcaret México.

But damn, it’s worth it and then some.

After a day of relaxation and a massage at the spa, it was time for dinner. I felt like I could relax and truly enjoy myself to the fullest.

CENIZAS

(Venison + Chipotle + Onion Dust + Frozen Corn Smut)

KUNG CRAB

(Pea + Ikura + Fennel + Fresh Beans + Yuzu)

(Green Pipian + Duck + Purslane + Hoja Santa)

TRUFA

(Cauliflower + Coriander Oil + Lemon)

MOLE ROSA

(Foie Grass + Red Fruit + Chocolate RB1 + Sea Salt)

PASTOR

(Local Pork + Pineapple Pureé + Serrano Chilli + Sweet Lemon + Avocado)

MARQUESITA

(Truffle Foam + Edam Cheese + Chocolate)

SAK

(Charcoal Ice Cream + Pear + Yogurt + Mascarpone Cheese)

Back at the suite, it was only natural to chill in the outdoor balcony hot tub as mariachi music floated through the jungle air.

It was the perfect experience.
