
Conversation Kitchen & Bar at the Thompson Seattle is a solid dining option for in-hotel dining in Downtown Seattle.
Hotel breakfasts are often uninspired, but that’s never the case with Hyatt Hotels. My stay at the Thompson Seattle was nothing short of impressive, and breakfast at Conversation Kitchen & Bar was a highlight that set the tone for each day.


Walking into the dining area, I was immediately struck by the ambiance. The space was thoughtfully designed—modern yet inviting, with a warmth that made it the perfect spot to ease into the morning. It felt like more than just a hotel restaurant; it had the charm of a standalone establishment, the kind you’d go out of your way to visit even if you weren’t staying at the hotel.
For my first breakfast, I opted for the SMOKED HAM MELT (bacon, tomato, arugula, cheddar, sourdough, breakfast potatoes). I paired it with a side of SIDE OF FRUIT with hot COFFEE and ORANGE JUICE.
Every bite was rich, well-seasoned, and exactly what I needed on a crisp winter morning. The balance of flavors, the quality of the ingredients, and the attention to detail made it clear that this wasn’t just another forgettable hotel breakfast. Every bite was well seasoned and perfect for a cold winter day.


The next morning, I decided to switch things up and lean into a Pacific Northwest classic: the MOKED SALMON LOX (herbed cream cheese, capers, balsamic onions, choice of plain or everything bagel). The herbed cream cheese was smooth and flavorful, the capers and balsamic onions added the perfect tangy contrast, and the everything bagel tied it all together. Each bite delivered that signature Pacific Northwest combination of fresh, briny, and indulgent – just what I was craving.
