Cajun Craft is the perfect, cozy hometown style eatery, serving Southern comfort food in Waco, Texas
Looking for a place to eat dinner in Waco, I was focused on one thing: a place that offered fried okra or fried pickles – not too far from my hotel. The front desk agent at Hotel Indigo Waco – Baylor was kind enough to recommend George’s Restaurant for their chicken fried chicken and fried okra. But, it just didn’t feel completely like what I wanted.
Sure, large places are great in certain situations. But, I didn’t want to hustle and bustle of a big restaurant. I wanted something local, smaller in scale and delicious. So, I’m truly happy that I received the recommendation try out Cajun Craft while conversing with the extremely friendly cocktail bar staff at Dichotomy Coffee and Spirits.

They have a very generous Bring Your Own Drink policy. As they are located across the street from a liquor house, I could definitely see how a space like this could be great for group parties and hanging out.
I ordered the FRIED PICKLES (Spears, Ranch) to start. The pickles were served, lightly breaded, with a side of some of the best ranch dressing I’ve ever had the pleasure of tasting. The dish was delicious, with the pickles shining through with the right amount of salt to give contrast to the taste profile.
For my main course, I ordered the CATFISH FRIED PLATTER (fries and hush puppies).
All I have to say is one word: Delicious.
This is EXACTLY what I wanted. The catfish was served pipping hot and delicious. The thin breading allowed the flavor of the fish to shine through each bite. The crinkle cut fries were well seasoned – with the right amount of flavor. It was almost a sweet and spicy blend of seasonings. The hushpuppies were small enough to be delicious – and not overly filling.
Most importantly, Cajun Craft was not stingy with the ranch, hot sauce and ketchup. When I asked for more, I received more – no questions asked.
Cajun Craft in Waco, Texas is a place I highly recommend for classic southern seafood. The location is cozy, the vibe is great and most importantly, the food is worth every bite.
