Dichotomy Coffee and Spirits

Dichotomy Coffee and Spirits is a wonderful coffee bar in the front / cocktail bar in the back social space in in Waco, Texas

There is something special about finding a unique place in a familiar area. After a morning of travel and a few hours of driving from Austin, I was eager and looking forward to an exploratory night in Waco.

Now, I grew up spending summers in Texas with my grandmother and other family members. However, I’ve only in recent years chosen to truly explore all of what Texas has to offer.

During this trip, I was inspired by Brad Perez’s Instagram story regarding one of his current sponsors, Apex Coffee Roasters. When I inquired, he directed me to visit their Waco outpost, Dichotomy Coffee and Spirits on Austin Avenue in Waco, Texas.

To say it was fortuitous, was an understatement.

When I walked in, I was deliciously surprised and delighted. It was absolutely everything I wanted in a place to sit, drink and write. Plus, the owner had prepared me a delightful care package of awesomeness including Santa’s Little Helper roasted whole bean, a beanie, a sticker and a wonderful Dichotomy Coffee branded Hydroflask coffee cup.

I was in a state of gratitude.

At the bar, I ordered the ALPINE FOREST (St. George Terroir Gin, Amaro Nardini, Demerara, Mint, Vanilla Cherry Bark Bitters). With my bartender setting fire to a spring of rosemary, the drink fully reminded me of walking through a luscious forest in autumn in Colorado.

 

It was a pleasure to write at a table and sip my drink. It truly made me wish that something similar existed in Los Angeles, with the same cozy down home feeling.
