After a sunset stroll around Nyhavn, a fresh baked waffle from Vaffelbageren - topped with ice cream - was the perfect way to end the day in Copenhagen, Denmark

After a delicious dinner at Vækst, I knew that I didn’t want to call it a night just yet. Even though I’d had a long day – with a rather early morning flight from Portugal to Copenhagen, I wanted to take more in – the life, the culture and the atmosphere of Denmark.

Luckily, my friend Jason had recently visited Copenhagen with his partner a few days prior, for an American Express Experiences event at Noma. Like a spark of intuition, he texted me a stunning photo of boats in a canal with colorful buildings in the back, during dinner. Immediately, I was stunned and texted him back, inquiring where it was taken.

Nyhavn, he wrote. Immediately, I knew what was next on the evening’s itinerary.

Walking up and down the canal, I tried to capture as much of the striking sunset as I could. The colors danced across the sky, giving contrast to the centuries old buildings along the canal.

What I love the most about Denmark is how walkable everywhere is. The city felt alive as I crossed bridges, hoping to get an even better shot than the last. I felt the history of the place beneath my feet. Well, I literally did because I somehow managed to pack the Worst Shoes Ever for walking around Europe. But, I kept on.

Before long, my partner wanted ice cream. So, looking around, we picked Vaffelbageren.

And they had the best version of one of my most favorite things in the world: a Belgian waffle. For documentation, I present waffle dispatches from  Le Funambule in Brussels, Otto Waffle Atelier in Bruges, and  Belgian Wic in Paris.

I. Absolutely. Love. Belgian. Waffles.

So, of course I ordered a BELGIAN WAFFLE topped with  VANILLA SOFTICE and – perhaps most importantly – of all CHOCOLATE SAUCE.

Sitting in the warm air, I was enraptured with the taste of the warm waffle, chocolate shell and creamy vanilla ice cream in my mouth.

It was everything I could ask for to top off my first night in Copenhagen.
