Dinner at Vækst was a delicious introduction to Danish cuisine - in a beautiful greenhouse atmosphere - Copenhagen, Denmark

When making reservations for dinner for our first night in Denmark, I knew that well portioned sizes in a beautiful environment was priority. Unfortunately, I couldn’t secure reservation Geranium. I also didn’t want something too far out of city center. So, when I found Vækst and browsed the menu, I immediately made a reservation. It looked well rounded and delicious.

Once we arrived, I was exceptionally pleased with my choice.

The Nordic / Scandinavian design – paired with the lush green space of the indoor greenhouse aesthetic – set the stage for a meal to remember.

The touches of service excellence began when we sat down. The table was elegantly appointed.

I began with the ELDERFLOWER EDEN (Elderflower, Gin, Clubsoda, Crémant & Lemon) and enjoyed that with the amuse-bouche.

The SALTED HALIBUT (green strawberries & mussel sauce) soup was splendid.

The TOSTADA WITH PICKLED CUCUMBER AND GOAT CHEESE and simple, delicious GREEN BEANS were delicious.

For the bread course, I devoured the SOURDOUGH BREAD with WHIPPED BUTTER (with buttermilk, dusted with powdered lovage). This was so good, I didn’t even stop to take a photo before diving in.

My main cause of DANISH BEEF TENDERLOIN (with wild garlic & morrel sauce) was delicate perfection. Especially, with my choice of pinot noir wine.

For dessert, I savored the STRAWBERRIES & RHUBARB (airy crème & meringue). Cracking the meringue was fun. But, the taste on my tongue was what I loved the most.

Dinner at Vækst was a perfect restaurant for a lovely, comfortable and yet quietly outstanding meal in Copenhagen.
