Breakfast at Drift Bar & Lounge at 1 Hotel Seattle

After one of the most relaxing and calming nights I've ever had in a hotel, I woke up ready for breakfast. Luckily, it was a short elevator ride down and walk to 1 Hotel Seattle's breakfast restaurant, Drift Bar & Lounge.

Originally, I found a comfortable seat outside in the covered patio, under a heat lamp. However, a baby’s screaming and banging utensils on a table had me quickly heading inside.

There, I was greeted by one of the best servers I’ve ever encountered at a hotel – Eddie. His warm and attentive attitude was a fantastic start to my morning.

First up was my Latte (with lavender). Because I absolutely love a lavender latte, no matter where I am. The frothy cup of coffee felt in line perfectly with the overcast Seattle morning.

The absolute star of breakfast was the Peach & Mascarpone Pancakes (gluten free pancakes, citrus marscarpone, house-made peach preserves) with a side order of the Hempler’s Bacon – fried to perfection.

To put it directly, these pancakes were some of the most perfect pancakes I've ever had. They were on the same level of taste as the breakfast I had during my Breakfast at DUO at the Four Seasons Resort Maui at Wailea experience.

My conversation with Eddie was heart warming and poignant. He told me stories of how he marked guests’ special occasions with little treats and complimentary gifts. For example, a previous guest spoke of taking their kids to the Seattle Aquarium. So, he printed out a 1 Hotel Seattle Aquarium activity sheet, that the kids could fill out and exchange for a complimentary smoothie at the hotel. He also told me of how he crafted a perfect birthday treat for a guest, who love coffee. it was absolutely refreshing to meet a staff member who truly loved their job. In a world that makes it trendy to hate your job and complain about others, Eddie was a shining example of what it means to have a job that makes you feel alive and compliments your personality, while allowing you to express joy. Plus, I joked that he more than likely makes more in one day of work at 1 Hotel than he did in a week at his old job. Laughing, he agreed.

Truly, my breakfast at Drift Bar & Lounge was a comfortable, relaxing and delicious experience at 1 Hotel Seattle.
