La Loba at 1 Hotel Seattle

     

La Loba is a Spanish-inspired restaurant in downtown Seattle known for wood-fired dishes, seafood, and shareable plates that blend traditional Spanish flavors with Pacific Northwest ingredients

After checking into my stay at 1 Hotel Seattle, I knew that I didn't want to go out for dinner. Plus, I had a fantastic fish and chips late lunch at Red Fish Blue Fish in Victoria.

The solution? La Loba, the hotel's Spanish cuisine restaurant located behind Drift (Drift Bar & Lounge at 1 Hotel Seattle).

Settling in and browsing the menu, I knew that I just wanted one experience: to peacefully enjoy a night cap while reading a few pages from my book.

To fulfill my desire, I ordered the Shrimp with a Lobster Tattoo (The Botanist Gin, Passionfruit, Almond Orgeat, Italicus, Yuzu, Lemon).

Instead of with ice, I ordered it straight up. It was perfection.

During check in, Lucy – my check in host – recommended one specific dish as one of the best at La Loba. So, it was only natural that I ordered the Scallop Crudo (Tom Kha Sauce, Candied Lime, Pickled Jalapeño).

In was exactly as she highlighted it as: four tiny bites of culinary brilliance.

In a beautiful stroke of harmony, I was also served a complimentary order of the Eggplant Parmigiana (Pomodoro Sauce, Basil, Ferndale Parmesan Espuma, Tomato Powder).

This was surprisingly delicious, as I normally don’t gravitate to ordering such a dish when I see it on a menu.

As I relaxed and read a few pages in my book, I reflected on my day. My time at La Loba at 1 Hotel Seattle was the prefect ending.
