Versante Hearth + Bar at Park City Peaks Hotel offered delicious meals and well crafted cocktails during my stay in Park City, Utah
After a hearty attempt to secure reservations for dinner on Park City’s Main Street area, we humbly returned to the Park City Peaks Hotel a bit hungry. Sometimes, you really don’t want to wait an hour for a table. Especially, when there is a perfectly good restaurant back at your hotel.

So, instead of getting increasingly frustrated at the lack of walk in reservations available in town. We pulled up to the bar at Versante Hearth + Bar.
Because I was in the land of High West, I ordered a OLD TOWN FASHIONED (High West double rye / sweet vermouth with bitters and a cherry).
Next up was a serving of the SPINACH ARTICHOKE DIP (roasted artichoke, cream cheese, parmesan garlic, pesto drizzle). This was absolutely delicious.

As a main course, we shared THE SPIRO (mozzarella, prosciutto, roasted pistachio, baby arugula, truffle oil, honey) pizza.
Again, like with White Horse Spirits & Kitchen, I was shocked by how delicious and modern the cuisine in Utah actually is. When I was in undergrad in Colorado, the running joke was that the state food of Utah was green jello.
Glad that actually wasn’t the case.
