Some places are so visually arresting that a single photo can inspire an entire trip, and for me, that place was Starlite in San Diego. After first seeing its stunning, mid century inspired interior on social media, I was captivated by the intimate atmosphere and the jaw-dropping geometric lighting installation that anchors the bar.
I tucked the memory away until a trip to the Farmers Insurance Open at Torrey Pines (Farmers Insurance Open at Torrey Pines: Watching PGA Tour Golf from Suite 16) provided the perfect opportunity to finally see it in person.
Arriving via Lyft from The Monsaraz San Diego, Tapestry Collection by Hilton, I found that the understated exterior gave no hint of the architectural treasure hidden inside.


The decor was even more breathtaking than the photographs suggested. This proved once again that San Diego’s bar scene is truly elite.

The culinary experience was just as refined as the surroundings. I began with the BERETTA (cognac, bourbon, rye, whiskey, amaro lucano, cynar, dernerara, benedictine, roasted cacao). It hit the “Old Fashioned adjacent” note I was craving.


For the main event, the STARLITE BURGER (caramelized onions, gorgonzola, dijon mustard, dill pickles – served with fries) arrived perfectly composed. Dinner was as satisfying to eat as it was to look at.

After dinner, I explored the deeper reaches of the restaurant and discovered the hidden waterfall room – a serene, beautiful space that felt like a secret sanctuary.




Between the impeccable design and the menu selections, Starlite is an evening destination that is even better than I imagined it would be.
