St. Elmo Brewing Company

St. Elmo Brewing Co. in Austin, Texas, is a popular brewery known for its diverse lineup of craft beers and laid-back, industrial-chic atmosphere.

After finishing up the Still Austin Distillery tour, I had some time before my reservation at Emmer & Rye to enjoy St. Elmo Brewing Company next door. So, finishing up my Old Fashioned cocktail and fries, I walked over to the St. Elmo tasting room.

Immediately, I felt a sense of relaxed chill. The vibe of a quintessential southern Texas brewery washed over me.

Surveying the landscape of the menu before me, I was immediately pleased. I was greeted by an exceptionally friendly staff member and asked his opinion on some items that peaked my interest. After some inquiring questions, I ordered an exciting flight of five beers with one bonus: BABY (Cognac Ba Barleywine w/Still Austin), ROXANNE (Pink Guava Sour), GARY (Hazy IPA), DADDY CHILL (Cold IPA) and CARL (Kolsch). Plus, a small glass of HOP WATER

After gathering my drinks and saying hi to the a dog chilling at the bar, I made my way outside.

At once, I loved the patio and vibe of the St. Emo Brewing Company space. It seems very community oriented and simply put – fun. I felt it would have been a prime location to meet friends, enjoy some beer and have a great night out.

Sampling before devouring, I savored each taste of my chosen brews. The Baby was my absolute favorite of all of my pours. The power the conagac aged barrels lent itself extremely well, taste wise, to the final product. Instead of the typical lightness of Texas beers, Baby was full bodied and distinct. I loved it.

The Roxanne was a light but distinct sour. Very refreshing and a solid choice. Not as strong as a sour from New Belgium Brewing. But, delightful, just the same.

The Gary felt like a light, traditional German style beer. The Daddy Chill was extremely unique. It taste light – with a very hop forward bite to it. Honestly, it tasted like I was drinking marijuana – which is how hop forward it actually is.

The Carl tasted like a very traditional German style beer: really light and easy to drink.

Above all, I appreciated the hop water, as it was not your normal water. I greatly appreciated it during the hot Texas heat of the evening.

Overall, I greatly savored my time at St. Elmo Brewing. The only thing that would have made it better is enjoying a pour of the Baby while demolishing a plate of barbecue from Salt Lick Barbecue in Driftwood.
