The Hummingbird Ceviche House

I’m not exactly sure how The Hummingbird Ceviche House first caught my attention. I had driven past it a few times, but it wasn’t until a series of chance events that it moved to the top of my dining list. I originally planned to go with someone else, but our plans changed. So, when I suggested visiting The Hummingbird for my sometimes regular dining out with Jeremy, I was delighted when he said yes.

To start, both Jeremy and I ordered the PURPLE CORN ICED TEA (pineapple, granny smith apple, chia). This was stunningly delicious.

Up first were the hand rolls. For my choices, I picked the Scallop (tobiko, wasabi-jalapeño) and Tuna (rocoto truffle, avocado). These were tasty bites that were full of flavor.

The Salmon tiradito (cucumber, aji limo paste, orange dressing, trout roe) arrived next. Which was a light delight.

The Grilled figs (candied figs, arugula salad, goat cheese, whole-grain mustard dressing) were truly bites of pleasure.

I think that my favorite dish of the evening was the Striped bass ceviche (aji amarillo, tiger’s milk, cancha choclo Peruvian corn).

The crunchy, oversized Peruvian corn kernels that offered the perfect counterpoint to the fish. Each bite was a bold, playful contrast of textures and flavor.

We finished with the Picarones (beignets – kabocha squash, sweet potato, anise, housemade fig syrup, pistachios).

The anise was the revelation – distinct but graceful, adding depth without overwhelming. It reminded me how underappreciated that spice can be outside of the holidays. In this dish, it was transformative. Both Jeremy and I were so in awe of it.

At one point, I even commented on how fascinating it must be to open a restaurant. I mused about the process of developing the dishes, refining them, and sharing them with the world.

Overall, my time at The Hummingbird Ceviche House was lovely – with the live music rounding out the evening nicely.
