T/aco

​T/aco in Boulder, Colorado, is a vibrant urban taqueria known for its inventive tacos, cocktails, and house-made tortillas

After a slow, cozy morning in bed, I finally left Breckenridge with one mission: burn through as much gas as possible in my rental car before heading to the airport. On a whim, I decided to swing by Boulder for lunch at River and Woods on my way to Denver International Airport.

Why Boulder?

Well,  New Belgium Brewery in Fort Collins was just a little too far for me to drive out and make my flight.

What I didn’t anticipate, though, was Apple Maps informing me – 20 minutes out – that River and Woods was closed. Confused and a little skeptical, I called the restaurant. A wonderfully helpful staff member picked up and confirmed the bad news: they weren’t opening until 4 p.m. – well after my flight was scheduled to take off.

But here’s where the afternoon took a turn for the better. When I asked if they had any lunch recommendations, he didn’t hesitate: “T/aco,” he said enthusiastically.

T/aco? As in… taco, like the food? Curious, I plugged it into Apple Maps and followed the directions. Thankfully, it said they were open. Minutes later, I was parked, seated, and ordering lunch.

First thing on the table? To start, I ordered the LUNCH MARG (Half sized Perfect House Marg).

Then, the WORLD’S GREATEST MEXICAN CORN CHIPS  and the FRESH SALSA TRIO (pineapple pepper, chili crunch and Pico de Gallo). Honestly, they weren’t lying.

Next up was the PORK BELLY (Braised pork belly marinated in guajillo sauce, pickled onion, cotija, cilantro) taco.

Frankly, this was one of the best tacos I’ve had this year. I would have never, ever guessed it would be in a taco spot in Boulder, Colorado. But, tasting is believing.

Wanting to savor just one more thing, I ordered the HOLY MOLE (Chicken cooked in duck fat, shredded cabbage, red onion, radish, cilantro, sliced avocado, cotija, sour cream).

They even have a secret menu, located here. It’s where you can find a more seasonal, rotating selection of awesome foods.

Overall, my time at T/aco – yes, like the taco you eat – was well spent. I left with a taco I ate at home back in Los Angeles for dinner, and a great memory of delicious food.
