Clark’s Oyster Bar

Clark's Oyster Bar in Aspen, Colorado, is a chic seafood spot known for its fresh oysters, creative cocktails, and stylish ambiance.

After an incredible morning of enjoying the Maroon Bells scenic area, photographing my drive toward Independence Pass and light shopping at Hermes next door, it was time to eat dinner at Clark’s Oyster Bar.

Sitting down at my table top in the bar, I took in the scene. Oysters? In Aspen? In Colorado? Safe to say the answer was yes, please, more, thank you.

I began with the AVIATION MARTINI (Ford’s Gin, Maraschino, Creme de Violette, Lemon). Which was the perfect start to celebrating the day’s accomplishments – with bread and radishes to start.

For oysters, I picked two each of the OISHI (Washington)  and the SAVAGE BLONDE (Prince Edward Island). The Oishi felt a bit meatier than I’d preferred. It was good, yes. But, the Savage Blonde gave me the light, crisp plumpness that I wanted.

For my main course, I savored the CRAB CAKE (Watercress & Frisee Salad, Picleled Shallots, Hollandaise) with the SHOESTRING FRIES (with Rosemary & Garlic).

Now, these fries were a bit – there is no proper way to eat shoestring fries. There just isn’t. But the way I loved using my fingers to enjoy the fried garlic and rosemary with the fries? Delightful.

The plump bites of crab cakes and the light salad accoutrement served me the best of Coastal New England – in Aspen.

As I finished my meal, I was truly in love with the moments of my time in Aspen.
