Saverina

Saverina, at the Kimpton Claret Hotel, serves up mouthwatering Italian-inspired modern American dishes, in an upscale setting

It had been over a decade since I last saw my friend Traci. Life had taken us both through its share of grief, pain, and distance. But finally, we were together again. I was genuinely excited to see her, as I’d truly missed my friend.

Since I was staying at the Kimpton Claret in the Denver Tech Center, meeting at the hotel’s restaurant, Saverina, was the effortless choice.

I started with the CORLEONE “THE DON” (monkey shoulder scotch, amaretto, amaro zucca). It set the tone beautifully as we eased into conversation. And of course, tears with seeing each other after so long.

Next, we enjoyed, savored and shared the BURRATA + SOURDOUGH (chimichuri, cherry tomatoes, toast). We savored every bite and every word, like time hadn’t passed at all.

For my main, I ordered the CRAB + ANGEL HAIR NOODLES (Dungeness crab, Meyer lemon, green onion, Parmigiano Reggiano). With every bite, I was absolutely in a state of pleasure. I – in no way shape or form – expected the food to be so delicious.

I also tried some of Traci’s SAUSAGE + KALE (fresh mozzarella, Italian sausage, chili crunch).  The fact that they make the chili crunch from scratch, in house, really stood out. In a time where restaurants often charge more while offering less, that kind of care and attention was genuinely refreshing.

To finish the evening, I went for a GOOD OLD FASHIONED (Uncle Nearest bourbon, honey syrup angostura, rosemary) as we enjoyed the CHOCOLATE CUSTARD (caramel poppy seed, white chocolate crunch).

The dish was simple but elegant. The poppy seeds were delicately scattered over the crisp white chocolate pieces, creating a very interesting visual and taste. We both loved it. After dinner, we headed up to Halo on the rooftop for water and more conversation.

Overall, dinner at Saverina was a series of meaningful moments. It was our chance to reconnect, reminisce, and share laughter while savoring food that made the experience delicious. It truly felt like the beginning of a renewed chapter in our friendship. Simply put, I couldn’t have asked for a better setting.

Funny – when one friendship ends, another – better one – tends to start right back up for me. Often, within the same month.

This is why I don’t really cry over endings – because something better tends to always come my way.
