Cohesion Brewing Company crafts Czech-style lagers using traditional methods for an unique taproom experience

I can’t pinpoint the exact moment I found out about Cohesion Brewing . I thought it was through pintsandsanels’ phenomenal Instagram account. The best I can remember, I clicked one of her posts, which led to another post, and led to this graphic:


Out of habit, I scanned the graphic, passively judging the selected breweries. After feeling a sense of satisfaction from seeing Russian River Brewing Company on the list, I immediately scanned over to Colorado.

Cohesion Brewing? What was this place all about? A quick visit to their website pulled me in deeper. Czech-style beer? Wait—what? Really?

After a calm, cozy morning of writing and unwinding, I headed over to the brewery. The York Street Yards had such a great vibe—industrial, colorful, full of energy.

Stepping inside, I was instantly into the space’s vibrant, modern design. I made my way up to the bar, scanned the draft list, and decided to go all in with a flight of six tasters.

Milada

11º Dry Hopped Světlé Výčepní Pivo (Dry Hopped Pale Draft Beer) 4.6% ABV – Single decocted and dry hopped, our beer supporting the Milada scholarship at MSU was made with the Pink Boots hop blend. Stone Fruit, Herbal, Cracker.

This beer was extremely…  light…. Easy to drink over a long period of time.

Nakuřované

11° Nakuřované Pivo (Smoked Beer) 4.4% ABV – Troubadour Maltings smoked some of their malt with cherry tree wood to add a rich layer of smoke flavor and aroma to this pale lager. With a delicate touch of citrus finish, we think you’ll enjoy this rarely brewed style. Smokey, Toasted Bread, Savory.

This beer was interestingly  savory and tasted like –  baked bread. The toasted nature was distinctly present and rather unusual for what I’m used to.

 

Ramona – Collab with Mikerphone!

10° Světlé Výčepní Pivo (Pale Draft Beer) 3.5% ABV – Utilizing one of our favorite non Czech hops, Nelson Sauvin, we created this 10° in collaboration with old friends at Mikerphone Brewing. In tandem with our normal 10° recipe, we think this beer finishes with a full body and hoppy flavor. White grape, bready, dank

This was a very chill, easy to drink beer. Not much more to say. It’s a type of beer that you can just drink over the course of a day and not get drunk.

Westbound and Down – Juice Caboose

Hazy IPA ABV: 7.2% – Dry-hopped with copious amounts of Idaho 7, Mosaic and Strata. Oozing with notes of juicy pineapple, cara cara oranges and mango Hi-Chew candy. 


Yet again, this particular beer was a very smooth IPA in the mouth. I enjoyed this a lot.

 

Weldwerks Brewing: Affogato Stout

Milk Stout ABV: 6.5% – Espresso, Ice Cream, Vanilla & Milk Sugar

This was an easy to drink, middle of the road, light and nutty stout.

Primitive Beer: Lunar Contraption

Sour ABV: 5.2% – Blend of white peaches & wet hops. A fuzzy peach mouthfeel with funk-over-fruit flavor, petrichor minerality, and pleasant bitterness.

This was a distinct sour. Not as interesting on my palate as what I’ve tasted at New Belgium Brewing. But, fine to express the nature of the type of beer.

Overall, I’m glad I stepped out of my comfort zone and tried something totally new to me—Czech-style lagers.

Are they my absolute favorite? Not really. I’m a Russian River Brewing meets Delirium Tremens type of beer lover. In short, Belgium all the way.

But I appreciate that they exist, the space itself was beautiful, I had a great chat about home brewing with a fellow beer enthusiast, and I walked away having trying something new.

That’s a win in my book.
