Bird Bakery in Greenwood Village offers made from scratch baked goods and cozy comforts in a in a warm setting

Waking up from a beautiful, blissful sleep at the Kimpton Claret in Denver Tech Center, I partook in one of my favorite things to do at a Kimpton: enjoy complimentary coffee in the lobby. I particularly loved this pastime while staring at the snowy landscape of Denver before me, from the hotel’s floor to ceiling windows.

After writing for an hour, it was time for me to figure out what to actually eat for breakfast. As I love discovering local fare for breakfast, after a quick search I decided on visiting the Bird Bakery.

Parking in their expansive lot was easy. Within seconds, I was within their bright and airy space.

The staff was extremely helpful. After asking for recommendations, I ended up with two mini cupcakes: a FRESH STRAWBERRY (classic yellow cake topped with fresh strawberry buttercream) and one of the seasonal mini cupcakes – a LAVENDER (classic yellow cake topped with lavender buttercream).

To satiate my hunger and prepare me for the day, I opted for the AVOCADO TOAST (arugula, tomatoes) with BACON and RASPBERRY CHIPOTLE MAYO.

Now, normally, I absolutely hate mayo. I consider it a useless weird white creamy mess. However, the way that she described it was – exceptional.

I absolutely loved both of my cupcakes. My avocado toast was exactly the light and filling fare that I wanted. Plus, as I learned during a recent trip to Mammoth Mountain, I need to over hydrate in higher elevation. So, I was glad that I opted for water vs doubling down on another coffee choice.

As I ate and wrote next to the fireplace, I felt such gratitude for saying yes so many years ago, to the life I have now.

There is something beautiful about being in warm, welcoming spaces, knowing immediately that you belong there, having good human based conversation and knowing that there are brilliant simple pleasures to love in life.

From delighting in the beauty of fresh baked cupcakes to relaxing and enjoying the snow falling from outside the window. There is so much beauty in this world to focus on.

And that’s what I choose to do.
